Never understood these kind of castles either, they we're built just for show in a time where fortifications like that we're useless.

Not so much, most of these castles were built between the 13th and 15th centuries, to secure the Loire Valley access during the Hundred years war, the english actually even always failed to take that kind of castles
That one is a good example : It's Sully sur Loire (not far frome Orléans)

I also assume that over the ages they underwent significant renovations that affected their looks as castles became more redundant.

Yep, you're absolutly true. Most of the castle lost their defensive interests when we expelled the english, and when the french kings unified and centralized the country.
That means most of the castle became "houses", more than true defensive castles, especially during the Renaissance era (15th/16th centuries).
The best example is Chambord on the Loire valley, between Orléans and Blois. If you take a good look at it, you will see that the main part was a dungeon. And defensive towers flank the courtyard's surrounding wall !
Fougère dungeon
Not Portuguese but Slovenian; was there last summer and it's probably the weirdest castle I saw. Built in front of (and partially in) the cave. There is also a tunnel which leads through cave so they could actually bring in food when they were under siege. Really really cool castle.
