Also I wouldn't really call anything in Witcher "Polish", even Redania which has a Polish coat of arms. It's more like generic Slavic.

Temeria, Velen included is plainly supposed to be Anglo-Norman, I guess Velen, with its proximity to Redania, which is Slavic, has a large population of them.
And Skellige is just Gall-Gaedheil, their language and surnames are inspired by Celtic languages, and everything else is old Norse.
