Difficult to say. Mexico was colonized really early in reality, I imagine the French wouldn't have really populated it until the mid 1600s or something. Assuming Euros would have still contacted them earlier, by then the functioning states of Mesoamerica might have recovered from plagues, so you'd end up with something more like India or Indonesia where France would have been slightly more hands-off and native nations would slowly get pulled together under a colonial economic system and then become a protectorate. There'd be wars of colonial control but maybe not the heavy migrations that the Spaniards did.
