You can't really say anyway, because most of those cheeses presented here each need very specific races. If you change the race, you won't have the same cheese anymore.

Those races are mostly based on tradition, but obviously back then they use the cows that were best suited for their region. You won't raise cows that don't like cold climates in mountains, obviously, or cows who don't like wet climates in rainy regions, etc...
