It takes a very long time to kill guerrilla units, and even if it seems you've killed all of them there's probably still more hiding and resisting.

The NVA had a fuckton of russian-made explosives but opted to use booby traps that didn't really kill because seeing wounded veterans had a bigger psychological impact on the anti-war movement.

Fighting wars against Asians is it's own special thing. Western militaries actually care about minimizing casualties. The Vietnamese and Korean wars both had massively lopsided casualty numbers.
Asians aren't human beings and don't care how many of their people have to die to achieve their objectives. Plus, Insurgency is a good tactic for waiting out conventional forces, who have to use way more resources just to maintain a presence on foreign soil.

We did beat them. The Tet Offensive was a complete failure and they were slaughtered in droves. We forced them to sign the Paris Peace Accords and they violated them by annexing South Vietnam after we left.

the point of the tet offensive was just one giant offensive to inspire a revolution, it wasn't coordinated because the NVA basically told them to go on suicide attacks.
it completely failed when most people did not take up arms to support them, and in fact pushed more people against them when they started massacring non-supporters.
