After all the pajeet memes, I cannot look at Indian Cuisine without the feeling disgusted first.
And I am a great fan of prawn curry.

Here polefriend, I'll give it to you anyway:

1.5 lb lamb stew meat (cubed)
~1 cup cashews (crush)
~1 cup plain yogurt
1-1.5 whole onion (white or yellow)
1 can tomato paste (8oz) or to taste
one hot pepper or 2 tsp chili powder/fresh pepper or chili powder to taste
2 bay leaves
~2 tbsp ghee
4 cloves crushed/chopped garlic or to taste or ~2 tsp garlic paste, or garlic powder to taste if you're lazy
grated ginger to taste or ~2 tsp ginger paste
~2 tsp garam masala
~1 tsp tumeric
~2 tsp cumin
~1 tsp coriander
fresh cilantro to taste
~1/2 cup green or sultana raisins
pinch of cloves
pinch of cinnamon
pinch of cardamom
pinch of saffron if you're feeling adventurous
1 tsp sugar or to taste
salt to taste

steps:

1. chop onion, chop pepper if you're using one, grate/chop garlic and ginger if you're not using paste or powder
2. melt ghee in large frying pan, fry onions, chopped pepper and cumin until onions are translucent
3. while onions are beginning to be done, add garlic and ginger if not using powder
4. when onions are translucent, add lamb cubes and brown them
5. add pinches of coriander, cloves, and cardamom while frying up lamb
6. when lamb is browned, add 1 cup plain whole milk yogurt
7. add the rest of the spices and tomato paste and turn oven to simmer
8. simmer for ~30-45 minutes in the yogurt, adding spices and ingredients progressively to taste
9. when it tastes really good to you, turn off the heat and serve it with naan and/or rice

the good thing about curry is that you can pretty much just throw all the shit into a pot and add ingredients until it tastes really good. there's a high threshold for failure, and this recipe is super flexible and the result of my experimentation with curry. you can also omit or swap most of the spices here and substitute the cumin/coriander/tumeric combo with curry powder.

Thanks lad.
I'll try it with chicken, lamb costs an arm and a leg here.

It's great with chicken as well, lamb just has that tender musky flavor. You can also sub cashews for almonds if you like those better. Curry takes a couple hours to make if you want to put a lot of care into making it taste good, but it's really easy once you get the flavors right. If you have yogurt, tomato paste, and curry powder or tumeric + cumin + coriander + garlic you can use that as a base to make basically anything.
