I don't remember kindergarten but in primary and secondary school we adressed teachers/professors in the formal way ("vikanje" - vi (plural form of you) and they adressed us in the informal way ("tikanje" - ti (singular form of you). Some older professors in high school adressed us in the formal way. In university everyone uses the formal way.

Grammatical gender is not physical gender. It just happened to align with physical gender in the original languages that had genders.
Nowadays it's unrelated and only a purely grammatical function.

As an aside, "Mädchen" comes from "Mägdchen", which comes from "Magd", which is a female noun.
Making a noun a diminutive makes it neutral. "-chen", "-lein" and the like is similar to a Japanese "-chan" or "-tan".
A Magd is the female equivalent of a vassal.

We have two situations. Either it's a young professor who tries to be hip by telling everyone to use "you" on him. (Well, that or he has an embarrassing last name so he prefers to be called by his first name, which requires the usage of du)
Or you are formal all the way. In fact, a professor once gave us the hint that we should always sie first and switch to du if necessary, because some fuckheads get offended otherwise.
Also, we should never sie someone who dus us. That's patronizing as fuck and makes you a beta cuck who's talking from a massively weakened position. You do that to children, not to other adults.
