Habichuelas con dulce is what kept me alive during NYC blizzard seasons and my ass had to walk everywhere still. Ita basically beans, cream, sugar and sweet potato but calorically it packs a wallop and the protein is great.
Honestly I don't season beans or rice, I don't add fat either. At most I'll as a tiny bit of garlic but otherwise nothing, not even salt.

You're supposed to let them soak for a while and discart the water. Mostly to make them softer on our intestines, so you don't feel all that stuffed and gassy, cooking them in it would defeat the purpose.
For seasoning, the usual Paio (special kind of pork sausage we have in Brazil, not sure how it's called in English), one or two bay leaves, garlic and salt we use here go a long way. If it becomes too salty, you can add some potatoes.
