Most French Canadians only call themselves "French Canadians" in the English Language, or when speaking to people of other nationalities.
Typically, in French amongst "French Canadians" one would use his regional identity to refer to his/her ethnicity.
Québécois is the big one, but there are countless fractures of the French Canadian identity both inside and outside Quebec. Some have existed since the very beginning of French Canadian presence in the Americas.
Some others:

-Brayons
-Gaspesians
-Franco-Ontarians
-Franco-Manitobans
-Metis
etc. and etc.
Each different group tends to have a very different dialect, because we have been isolated from each other for 100s of years since the fall of the empire. Pan-French Canadian identity clung on until the fall of the Catholic church about 50 years ago, but since then it's been mostly a myth, and we're only held together by the Anglos between us in reality.

Some of my facts may be a little spotty, I can suggest some reading at the end though.
French Canadians are mostly known throughout the world because of Quebec and perhaps because of it's separatist movement.
From the outside, it all seems simple enough, but the reality is that it has caused great frictions between all French Canadians, both inside and outside Quebec
Some see the separatists as a threat to French Canadian rights outside of Quebec, as the province has always been the main bulwark against forced assimilation since the dissolution of New-France after the 7 Years War.
But this is not where French Canadian tensions begin.
The French came to North America in the early 17th century, but it took many attempts to finally start up colonies. Many settled in the St-Laurence river base (present day quebec).
But there was another group too. The "compagnie des 100 scies" (company of 100 saws) was hired to restore a port in present day Nova-Scotia that was abandoned due to excessive profiteering (the King saw evangelisation as being more important). The port was under supervision of the trusted Miq'maq native tribe during it's abandonment.
But this company soon mingled with the natives and opted to settle permanently nearby them. These "Acadians" as they would eventually call themselves, used dykes to drain out marshes and farm the rich soil, with their nearby native allies living in the other parts around them.
These Acadians received approval from the King, and remained an independent,neutral nation during the horrible wars that would soon ravage North America for centuries.

New France was busy all the while, making friends with Native Americans across the continent (or so we say) and becoming rich trade partners with them. An entire network of fortresses was built across the continent to defend it's trade interests.
With the help of Native Americans, New France withstood British Expansion for 150 years despite the French never numbering more than 100 000 or so across the entire continent (not sure if this number is only accounted citizens or something..)
But religious tensions were higher in this era than we understand today, and New France wanted no Protestants making any sort of expansion into it's territory.
And as time went on, Protestant Anglos began settling beside these Acadians, or "Neutral French" who had become trusted business partners of the Americans over time.
Solution? Send in extremists priests to preach at the churches, and recruit extremists, Natives and Acadians alike, to put an end to this. Scare the Anglos out of their wits with terror attacks to deter further settlement.

There is still some mutual accord in there. The Anglos were always much more of a threat to Natives because they would send literally millions of settlers while scarcely any settlers came to New-France cause it was kind of a shitshow and the French generally Cared little for it's holdings in North America.
The writing was on the wall for Natives very early as to what would happen to them in an English North America and it was never really difficult to garner their support.
Yeah maybe a little cash helped, but clearly if it was only cash that mattered the English wouldn't have consistently fell on the wrong end of a tomahawk.
