Hit up Parras de la Fuente. Nearby is Casa Madeo, the oldest winery in the Americas. The wine isn't great, but decent. Saltillo is OK but dull. It's interesting to contrast it with Monterrey because Saltillo was the regional center until Monterrey overtook it sometime in the 19th century. They represent an old and new Mexico in their architectural make up.
