If you want to make something really different try mole poblano.
It's a sauce to put on chicken or meat or what have you, it's made with several different kinds of chile and chocolate among other stuff.
If you like fish try Mojarra al mojo de ajo. Not sure wich fish it is in english, it's fried and seasoned with garlic.
