The vast majority of viking raids were done by peasants who only fought for two months a year. They rarely had armour beyond a large centre grip shield. The jarl would have had a helm and maybe a riveted mail hauberk. Swords would be used by a few, but the main weapon would be long axes or spears. Vikings raids were never true organised battles. They relied on shock tactics and the only structered battle tactic they had was the primitive shield wall. That said the varangian guard of the early to mid byzantine was made of mostly huscarls. The elite professional warriors of the norse people and they had a fearsome reputation throughout the near east.
Samurai mainly used the japanese long bow from horseback with a spear as the primary weapon on the ground. Swords were an absolute last resort on the battlefield and reports of samurai fencing in battle conditions are nearly non existant. The samurai's armour depending on the period would range from laminated paper and leather or laquered wood to a rudimentary splint mail coat, similar to the late medieaval european jack of knaves. It is important to note that as soon as the japanese came into contact with european armour styles they imediately adopted them over their native battledress.
European knightly tradition can arguably be traced back to the heavy cavalry of the roman legions. Early armour would have been mostly mail with a norman style or great helm. Post 1400 ish full plate began to become more common and by 1500 plate armour was fully articulated rendering the wearer nearly immune to attack. At this point shields were discarded, made redundant by the protection provided by plate and the longsword rose to prominance as it allowed the user to grapple whilst holding the sword in one hand, use the sword two handed against less armoured opponants, or use half swording techniques to find weak points in armour.

What are you talking about? Samurai is the warrior class, most of them are born to samurai families/clans and are trained in various martial arts, called "Kyuba no Michi", including Jujutsu, the ancestor of modern Judo, which was a very practical one to deal with armored opponents.

I should know what I'm talking about. I myself commissioned a genuine English Longbow in England for 13220 Pounds (that's about $20,000) and have been practicing with it for almost 2 years now. I can even shoot through slabs of solid steel with my English Longbow.
English Bowyers spend years working on a single English Longbow and drawing it up to a million times to produce the finest bowmen known to mankind.
English Longbows have thrice the draw weight of Eastern bows and penetrate thrice as deep for that matter too. Anything a Yumi can pierce through, an English Longbow can pierce through better. I'm pretty sure an English Longbow could easily pierce several samurai wearing full Yori with a single shot.
Ever wonder why Sengoku Japan never bothered conquering England? That's right, they were too scared to fight the disciplined Englishmen and their English Longbows of destruction. Even in World War II, German soldiers targeted the men with the English Longbows first because their killing power was feared and respected.
So what am I saying? English Longbows are simply the best bow that the world has ever seen, and thus, require better stats in the d20 system. Here is the stat block I propose for English Longbows:

People have this idea that knights were these noble souls because of some poetry that was fashionable at times.
Reality is that a knight was a warrior that trained his entire life at arms, with many different weapons. They were brutish, they didn't know how to read or write (almost no-one did anyway) and they enjoyed slaughtering the plebs as much as the next guy.
Vikings were warriors as well, not everyone in Scandinavia was viking, it was a job, not a term for an entire people.
Most Samurai wore their swords as a sign of their status, but a lot of them were just administrators.

Hard to say. I'm gonna assume we're going 11th century, since that's the only century where there were samurai, knights, and vikings. So the knight and the viking are armed and armored pretty similarly (chain hauberk, nasal helmet, kite shield), with the difference being slightly different swords, and that the knight has a horse. Meanwhile, the samurai is basically a horse archer in leather lamellar (maybe iron, *maybe*).
If knight and samurai get to use their horses, the samurai probably wins since he has a bow. Otherwise probably the knight. The samurai most likely has inferior armor and a sword that is not designed on someone wearing mail, and if they're on foot and it's a melee then he won't be able to get far enough away to use his bow. The viking would be tougher, but the knight would win because vikings were basically just dirty undisciplined pirates and defending against viking raids was one of an early knight's duties IIRC.

Both Chivalry and Bushido are similar in essence. Usually duels where the participants fight, tires out and eventually overpower the other. Vikings have their own way of duelling where 2 warriors butt shields together and must manoeuvre both the shield and sword to a point where they can attack without themselves being attacked.

This "could" work against the samurai, seeing as samurai dont often use shields, but if a samurai owns a proper set of plate and chain armour, as opposed to lower class samurai wearing small amounts of iron and leather, chances are the viking blade wont do much. It's a 50/50 with samurai vs viking.
With either samurai/viking vs knight is a different story. Knights battle consists of exhausting your opponent, tackling them and overpowering them to the point you can thrust a smaller blade weapon into one of the various gaps of the plate armour: armpits, groin, neck, behind the knee. The only one I see even getting close to pulling such a thing due to similarities in fighting styles is the samurai, but I doubt they could actually do it. The vikings fighting style is too different, while they like the knight have a shield for defence, they often rely on attacking only somewhat armoured opponents around a shield, not full plate.
In the end, it comes down to equipment, but in most cases, my bets on the knight,
