Ketchup does not need to be refrigerated.
You go to a restaurant, and it has a ketchup bottle that's been sitting out for the entire day.
The whole "keep refrigerated" was propaganda made by the ketchup companies so that your bottle would be in the fridge where its bound to be used more, and bought more rather than a cupboard where its less accessible.

Lots of condiments do not need to be refrigerated, even after opening.

Mayo, mustard, pickled items, etc.

sure, but they are always ultra pasteurized, and dont require refrigeration.
Yes, warm mayo is weird, and refrigerating it will make it last longer, but if you consume it within a month or two, you dont have to worry about it.

If you can't get them fresh on a regular basis, yes.

My girlfriend lives on the country and her chicken produce like 6 eggs/day. So she keeps them in a basket in her kitchen. But I live more in the city so I get them in the grocery store and keep them in the fridge.

Actually it lasts for a year in the fridge.
The thing is that stuff like heinz goes bad, is not that it will get flies, between the conservatives and the sugar that's extremely hard, but it will start to get sour and the liquid part will be separated from the solids. As for the mayo he is just plain wrong, pasteurization isnt to prevent the product from going bad, it's to kill the bugs from the eggs, milk, etc. Warm mayo decays pretty quickly after being open, you just need to smell it to know how bad it is. He names "restaurants" as something to take into consideration, but the reality is that most bottles are consumed in a day, they don't stay there for 2 months.
Some stuff can be kept outside, other just can't.
