Depends on what you mean by "American" food. Mexican food is pretty based. Waaaaay better than Portuguese or Spanish food. But it's also way different than, say, traditional south eastern US food.

There's no big difference since both countries used to be one for almost a millenium.
The only differences are spawned by local cooks making small variations of the product and maybe getting famous for it in their sector.
Stuff like that still happens nowadays even in foreign countries - for example "Döner Box", "Gemüse Döner (vegetable döner)", Kebap Pizza" or munchiebox.
Other variations like different spices used, different cuts of meat or type of meat, and serving variations (breadtype, sidedishes, e.g.) do also exist aswell.

Just charging at the enemy with cavalry works every single time, but its a very boring way to play the game. Its much more fun to try to screen your ranged infantry with melee infantry, and to try to pick and hold a hill.
Beside, cavalry cant charge hills that easy.

With a mameluk's armor, you could have them charge on foot and still have minimal casualty (which is basically what you do in sieges)
And their morningstars are just the best weapon to have in defensive sieges.

If you want to take infinite prisoners after every battle, yeah, their blunt maces are the best option for prisoner taking. But, if you already set up your businesses and can rely on passive income, nord huscarls are objectively the best troops you can have for defensive siege, while vaegir archers the best troop for offensive siege.
Later on when your army is big enough and you plundered enough lords so they dont have a 300 soldier armies, they kinda run away in the field, which makes siege battles more important than field battles.
