Those numbers are totally out of whack. I'm not being a crybaby, but I'm not buying that these numbers reflect merit. A combination of factors, I'm basing my inference on comparative metrics in a variety of fields and assuming it should be at least roughly consistent with them. Basically, I'm regressing the sample by attempting to draw comparisons from other fields.

In this case as well, America is a hotbed for skilled foreigners and we have an extremely diverse culinary tradition to draw on from a variety of ethnic backgrounds.

You mean like a roast?

First of all, make sure it's not some steroided up freak of nature full of antibiotics.

Second, baste the outside of the chicken lightly in some olive oil, then slice a lemon in quarters and rub all around the skin. Then liberally salt (try to use good salt).

If your inclined you can make a stuffing too, even if it's as simple as some diced rosamary, garlic, lemon slices etc.

Put in the oven on a high heat (~150) suspended on a tray so that the juices fall below into your vegetables.

Roast for ~40 mins, or until the skin is browning and turning crispy. Then strain the sauce into a saucepan and let simmer until it reduces into a gravy. You can add a bit of white wine, salt and pepper.

Cut the chicken up and pour the gravy over it, and you're ready to eat.

That's just cognitive merit, too. You could also include things like the Olympics.

Point being, all of those numbers are in roughly the same ballpark, whereas these numbers alone are completely of whack. In my estimation, it's more likely after this regression that this system doesn't accurately reflect international merit.

The real question is why is it that Euros seem to think that a decent rendition of a regional specialty can't be made outside of that region. Making a good paella is hard as fuck. There are many tricks and it's something you can't cook by just following some online recipe.

Last month I was in London and went to an open market. They were cooking a paella and they got everithing wrong. If you want to learn how to preparte a real paella you must go to Valencia. Some people says that the hard water from Valencia is better for preparing a paella. A cook in Asturias brings water from that region for example.

for example if you make shitty steaks in Tuscany, no locals will come to your restaurants because they know what the real deal is, but if you open it in a place that doesn't have the same steak tradition people are just going to assume that's what Tuscan steaks are like and settle for an average or bad product.

I have never eaten well in France. The closest I got was close to the French border. It was still horrible, full of oil and grease (as were the staff), the wine was harsh and generally it was overpriced.

The other problem I have is that if I eat in pretty much anywhere else in Europe I trust the staff to do things like wash their hands. In Spain you're taking a huge risk.

Regression is not at all an intuitive concept. It didn't exist in the human mind until Galton identified it quite recently.

Basically, let's say that you're a Rugby player and you have an outstanding game. I'm not sure what that would mean, but let's say this player either does very poorly or very well. If you were asked to predict the player's next performance, you should avoid any kind of causal explanation, ie. "he'll be on his toes this next game so he can make up for that terrible performance", or "he'll be feeling overconfident and thus unlikely to match his prior performance". What is likely to happen is that his scores will regress towards the mean, because data in individual samples has a natural tendency to do this.

an inside layer, that's like...a sponge but not really. imagine an elastic sponge. it's soft but quite firm. you need to see it to understand i can't really describe its consistency. in this pic you can see the outer film wrapping the internal ball
you can't just fucking grate it and spread it evenly.
