It's hard to farm horses in the same way you farm cattle. That makes it expensive compared to beef/pork
Plus, why would you want to? It's not like we domesticated the horse to be a food source, why treat it as one?

Horses are extremely capable work animals. Reducing an able horse into meat is a massive waste and an old horse barely has any good meat on it anymore.
