There's 1-2-3-4- gear settings on most automats. Setting it in D is "overdrive" meaning it will shift up to 5th or 6th gear depending on what is highest.
Setting it in 1-4 will limit it from shifting up, so you can use engine braking that way.
There's also cruise control doing this automatically on newer cars.

If you seek out late night empty roads, use your high beams and act as if every corner, every bend and every blind angle has a small child and a semi trailer behind it, you can do it "safely". I also never take blind turns unless I've been able to see the road further ahead and know there hasn't been a car coming towards me for like five minutes + utter darkness.
The trick is to flip your high beams off and on when nearing the corner, so you can see the other guy's lights better.
