what does greek sound like to a non-greek?

i've asked this question to a couple of non-greeks i know and they replied with

"a mix of dutch and italian"
"a less-slavic sounding version of russian"
"a mixture of some slavic language and italian"
"spanish but harder"

I study Ancient Greek, but Modern is way different both in grammar and translation.

Greek is a very beautiful language
To me it sounds like a flow of medical or science related words
Under a phonetic point of view it reminds of spanish and north italian (especially venetian),but overall it has a unique sound

Ελλάς is used only in artificial katharevousa, the nominative in demotic is Ελλάδα. It assimilated to feminine nouns ending in -α.

No, Koine continues to be used in liturgy.

Katharevousa was an artificial, purist form of Greek created in the 19th century to serve as the standardized language of the state. Thankfully it didn't win out and Standard Modern Greek is based (though with some influence from the katharevousa) on more vernacular (south) Greek.

Right. And given I have some knowledge of Ancient Greek in general, I know Koine is pretty different from Modern.

I can barely understand Modern written Greek tbqh, but I'm having no trouble reading Aristophanes and stuff like that at Uni.

I wonder if it's just because i'm not trying hard enough, or if it really is that different.

The biggest step for me tβh is from classical Attic to Koine. Koine even had most of the same pronunciation as modern Greek except for a couple of features iirc.

Yeah. The grammar is very similar though.

I can read the Bible in Koine if I have a dictionary to use for the weirdest words.

Basically just some words ending in 'ous' or 'os'
