Proof is very strict, we use things that are not proven all the time.
This is not just a random idea floating around, it agrees with human general experience/observation on how inheritance works going back to prehistory, and explains many observed things.
The only hitch is for a while we thought we understood something that contradicted those, so we proclaimed the entire thing to be wrong.
