Yabbies need a couple of hours in a bucket of clean water with a teaspoon of salt so they shit their guts out and it cleans them up.
After that, boil them up for a couple of minutes until they go red, stick them in freezing ice water to stop them overcooking- then you can just go at them like prawns or cook them anyway you really want.
Kind of need a lot of them of decent size to make a meal of them, but they're really not too bad. I'd probably eat carp if I was desperately hungry, but I'm not so I'll skip it!
