Brits, what places should I visit in the United Kingdom? I'm planning to hike all three states, and I have a thing for quaint country spots, rather than big cities or generally touristy areas.

Remember, tourists are money.

most of the countryside is the same
You could do worse than: Malvern, Wye Valley, Forest of Dean, Tintern, Hay-on-wye, Brecon, Leamington Spa etc

Best idea is to use their names, but if you need to use a general term call them "countries" or even "nations". If you call Scotland a country, it is understood that you don't mean an independent country.

Brits tend to think of the UK as a country made of constituent countries.

South Downs Way is long and a very beautiful walk in summer. Can take in the seaside towns and Brighton too easily.

By the way, walking for pleasure is a thing in the UK and there are several National Trails that are clearly signposted around the country.

https://en.wikipedia.org/wiki/National_Trails

You may want to do some of these when you're here. They're pretty long, often people only do part of it.

I know you said you want to avoid cities, but imo the Thames Path is an amazing walk. It follows the Thames from its source, right through the heart of London, to the Thames Barrier. I love the Thames Path, I do parts of it occasionally when I need to clear my mind.

Most of the other National Trails go through countryside, you can't really go wrong.

Another thing you may want to do is the Jurassic Coast
