Or just don't specify.. In Dutch a 'biefstuk' is a steak, and a 'paardenbiefstuk' is a steak from a horse. But there's no law or linguistic rule that prevents you from selling horse steak as just 'biefstuk'... There was a famous café in Amsterdam, widely appreciated for it's simple inexpensive steak meal (steak+fries and salad for <€10,-, which is quite a fucking thing in Amsterdam)... The fact that they served horse steaks rather than beef steaks was a public secret for years, untill the local paper published an article in which they had a sample DNA tested or something..

Apparantly horse tastes a lot like beef when you cook it like a steak.

Pretty much this. A bit smarter perhaps, but not a lot.. Pigs are MUCH more intelligent than both, and we have no qualms about locking them up in tiny shacks covered in their own shit.

Also, horses have the delicious property of becoming MORE tender as they age, rather than chewy.. So you can ride it all it's life and then still have a deliciously juicy steak or sausage at the end.

Even so, I don't see how that would mean we wouldn't eat them.. We've used cows in much the same manner, yet 'Oxen sausage' is still a delicacy in Amsterdam. These days mostly made of 'normal' cows, in the old days the sausages would be made from the Oxen that hauled goods into the city, and were often not taken back but sold as meat... Not doing the same with horses seems arbitrary imo.

I never tried horse meat, but I eat a lot of different animals, beaver, wild turkey, bear, raccoon, etc. I would guess that horse meat is tougher than cow meat. The muscles from animals that are used less often are always more tender. Horses move around more than cows, so it must be the way they cook it that makes it more like cow meat.

We've used cows, sheep and goat for more than just eating them, most notably for dairy and whool. We've also used cows as beasts of burden, like we do horses... The distinction between them is completely arbitrary.

But like I said: We've always eaten them.. When horses become too old, or break a leg, they become food. That's pretty much the way of the world... The UK and other Anglo states are literally the only exception.. It just seems silly to me.. Especially knowing how well horses do as sausages.

Actually most of the horses that go to slaughter here did live their life as pets/companions/whatever.. I heard that in Eastern Europe there's quite a few meat-horse farming though. Apparantly breeding horses for meat is inefficient though, as they need too much food & water per kg of meat compared to cows.
