Actually dude, there are some stuff you need to understand 中国人 = Chinese base on nationality.
Over here in Singapore/South East Asia at least we use 华人 for Ethinc Chinese of a country
That is why you see Mainland Chinese, pop up in HK or TW news/movies.
So if you go up to someone and ask if they are 中国人 even if he is ethnic chinese, he will say no, because he lives in another country.
Kinda confusing, I know, but this is how it goes.

Well, low standards and inconsistency aside, it would be very hard to explain without seeing it for yourself. America is very slapdash and un-inspired when it comes to food service. There are certainly big cities that have decent bakeries, but that is not the case in the rest of the country.
American palette is not as discerning or careful like Japanese, the standards for flavor, balance, and texture are all wrong. I even prefer Japanese version of French bakery over authentic French which is too old fashion and hasn't improved its technique and flavors with the times.
The only food on earth than can compete with Japanese anything is Italian or Singapore/Taiwan fusion.
