any food can be minimalized and marginalized. Spanikopita and baklava are pastries, steak au poivre is a slab of cooked meat with alcohol, cream, and peppercorns, hamburgers are just a ground meat sandwich.
They have good fundamentals - going so far as to categorize sauces and build a family tree for them. Most of what makes great French cuisine (or any other for that matter) great is how textures and flavours work together. Plating helps too, seeing as some of my favourites are literal peasant food.
