If you're willing to buy a couple things from town every now and then, not too hard. Wells aren't very expensive and in the South we're pretty close to the water table in most places. Hunting for food. Land is reasonably cheap. You could buy a generator and get gas or propane from a nearby town and you wouldn't have to go into town that often.

Pretty easy. Land is relatively cheap. You can have someone come out and dig wells for you. The south east is heavily wooded with many insects, but you can level land and install solar panels if you want. Northern Oklahoma / Kansas / Nebraska are more flat and open. Probably better for a wider verity of crops and raising cattle, but you will get snow. People out in BFE usually have SEPTIC tanks, but I've seen plenty of outhouses which are easier to make too. It might be worth it to invest in a transceiver, solar panels, and some deep cycle batteries in case you get bit by a rattle snake and need help. US acres and European acres are measured differently though so look it up before you purchase land.
