I've noticed that Slavic folk art tends to show men with lumpier faces than Soviet art, which draws Slavs with square features.
Is this just a stylistic choice, or are there particular ethnic groups associated with each one?

I'd argue this was a global art trend more than anything else. Most realist Western art during the 19th century slightly emphasizes certain traits, like eyes and noses. Modern realism of the 20th century tried to be more honest and less idealized.

Soviet art was obsessed with all that industrial straight lines, square faces fit in better.

Folk art on the other hand is always more reminiscent and nostalgic, you want to feel sympathy for your countryman, his pain is your pain.

Not to mention an easier, less weathering lifestyle would be floated by the Soviets, whereas a rural-farming lifestyle would be expected for Slavs, leading to rougher features.
