I think it is like when you are tackling the basics of a language, some languages may seem to be more difficult, some less, in comparison.
But once you have gotten to the intermediate level and want to push it further, it is the same for any languageāit becomes all about enriching your vocabulary.

Spanish is probably the most formulaic and has the least amount of exceptions of any language.

It's also the most "sweet" sounding and looking language. It also holds the least amounts of "that's bullshit" per learning session. Italian is a close second but it's useless.
I like how it has a fixed word order and little to no conjugation (and no genders). That makes it very predictable, and any learner should fairly quickly notice the speech patterns. In addition to this, there are barely any challenging sounds or combinations of them.
