A lot of the things posted have been memes and not gimmicks so I'll run down the difference.
The most fundamental difference between a gimmick and a meme is that a gimmick is started by 1 person and is then used by that person solely until it is either stolen or fizzles out. A meme cannot be attributed to one person it is a group effort
Kevposting is a meme NOT a gimmick.
An example of a gimmick would be fitizen's "How is /gf2015/ coming along lads?" with a picture of a leaning liverpool player. Alternatively, Thailads squinty asian girl or cornwall's FONTposting
