Because most of their big cities were built by settlers that established something quickly and according to a plan, unlike most big European cities who used to be small villages that grew larger and larger.

in most US cities the 'streets' and parallel to one another and the 'avenues' are perpendicular to them.
The streets in big cities like NY, Chicago, LA number up to like 200+ in just one direction. The 'named streets' cut across them and then there are side streets and diagonals.
