Why would I order something that I can make myself in two minutes? Also they're called Spiegeleier ("mirror eggs"), either because they're flat as a mirror or because the yolk shines like a mirror when done right.

When you flip the eggs to cook both sides, but the yolk is still liquid, you call that "over easy".
If you cook it longer to that the yok gets harder, that is "over medium".

I met this person who liked runny yolk but instead of fliping the eggs used this large amount of oil and almost deep fried the egg, just the right amount of tme to cook the yolk 'til turned into a light pink color.
