The lunch lady at my grade school used to sell tamales as a side deal to make extra money (it was a Catholic school, doubt a public school would let her do that). $1 each. My family makes a huge pot of tamales each christmas eve for about $20. I don't know how many are made, but at least 100 easily, so she must have been making bank.

They do take long to make, kinda like turkey which maybe is why they're popular during the holidays, but that's why people make a ton of them when they do make them. If you want more out of christmas season try finding a mexican grocery store. Often times someone will have a little stand outside and sell corn, tamales, pork rinds, etc. The nearby mexican grocery store has a guy pretty much year round selling such things unless it's below 0F.

Are christmas meals really that lacking in variety of options in your countries?

Every christmas dinner I've ever been to, even the ones who weren't my family's had a lot of options. Generally turkey, Christmas ham, roasted pork shank, greek rice, salpicão (a salad with shredded chicken/turkey meat, and either pineapple/cherry/green apple/raisins, oftenly served with potato sticks), and in my family always a "cheese mousse" made with ricotta, diced celery, cream cheese, grated carrot, fresh peas and raisins.
And don't even get me started on desserts.

If there isn't enough food for everyone to eat until they can't take another bite and still have leftovers for the next three days, it's a shit christmas dinner.
