Underbite is obviously genetic. In the Asian gene pool, underbite is just a more common allele. There's not much more explanation.

Mostly, they eat too many soft foods and not enough tough foods while growing up. Fortunately, this can be corrected by simply keeping the jaw aligned (move the lower jaw in place and then press the tongue against the roof of the mouth) and eating more tough foods and chewing gum (not the soft kind). After two years or so, the lower jaw should be back in it's proper place. However, I don't recall that this would fix any ingrown wisdom teeth issues although it should alleviate some or all snoring.
