Overall its a series of unrelated battles that can be described as a french civil war, and which the southern continental frenchies won, while the northern british frenchies lost.
No nations were evolved, and seeing how different total war is from medieval war, one can argue no countries were involved, and that it was a conflict between the private armies of a few very rich and powerful people from two french families, and whoever they paid.

The first time it was expressed spectacularly was at the battle of Bouvines, and it had to already be deeply ingrained by the time of the Hundred Years War for Joan of Arc to do what she did.

People didn't just wake up one morning on the 14th of July 1789 and suddenly become a nation. What happened at the French Revolution is that French nationalism was repackaged into a universal concept, that could be exported to other countries. And with Napoleon's conquests, this was when most European countries first discovered that concept. But for the Revolution to be able to do that, that concept had to already exist, as it did for France since the Middle Ages.
