What does this mean?
"Not even ones"
Not even once did she talk to me—She never talked to me.
Not even once (but twice) did she talk to me—She talked to me more than one time.
Which one is correct?

"Not even once" = "She never talked to me" is correct. The other one doesn't make sense, although it would make sense if you were to rephrase it as, "she talked to me not once but twice".
(also, I'd use "not once". "Not even once" sounds a bit awkward).

"Even" implies a limit. For example, "the rocket didn't even reach an altitude of 500m". So when you're saying "not even once", you're implying that it happened < 1 times. That's why it doesn't make sense to say "not even once but twice", because you're contradicting yourself.

You don't leave it out, it signifies that she visited him less than once - or in other words, never.
My Russian is dreadful at best but thing of "even" a bit like "дaжe".
