The US is 77% caucasian, which the census finds synonymous with white.
Of this total, 2-3% are Middle Eastern(mostly Chrisians however), <1% others(Gypsies, unknown ancestry)and another 3% have a white parent or part white, but are not Hispanic.
Most of these people counted as "mixed race" in the white population, about 2/3rds are caucasians claiming Native ancestry, and the rest are actual biracial(mullato, Eurasian).
The US is then 72%-74%(varying definitions)European.
Of this total, 14% of that lower 72% are Southern European in origin(Spain, Italy, Portugal, Greece).
The European percentage also includes people from Latin America who identify as white, which make up 10% of the US population(mainly Mexicans, Cubans and Puerto Ricans of primarily Spanish and French extraction)
Most of these self-percieved Hispanic whites are usually 70-80% European geneticall(non-Hispanic, European-Americans are 96-97% European genetically), as opposed to 50-60% genetically European across the total Hispanic population, which usually self describe as "some other race"(almost entirely mestizos, which are the traditional intepretation of a Mexican)on the census given that the US doesn't follow the same racial definitions as in most of Latin America. Mestizos make up about 6-7% of the US population, with a minority(<1% of the US pop.)self describing as white.
Then finally the US is the often-cited 62% non-Hispanic white.
This is the number of White Americans who don't have origins in Spain, Latin America and Portugal(definitions vary), which is rather excluding considering that Hispanic is a culture and has an identity based on language rather then race.
The Hispanic category is a meme category imho.
53% of American hispanics self describe as European or Arab, while 43% self describe as "other"(stereotypicaly flat faced Mexicans) or "mixed", and the remaining % are black, Indian or Asian.
If you want a real estimate of how white the US is, I'd give it a 70%.
