I'm from Southern California so I've had plenty of authentic Mexican. I live in Tennessee now and the canned and boxed stuff is all they sell for the most part. I don't really know or care how to make it all from scratch with fresh ingredients.
There was a really good Mexican restaurant near me, owned and staffed by Mexicans, but it closed last year.

Real TexMex isn't bad at all if it's done right. And if you go to Atlantic Canada you can get kebab, called Donair (based off döner). It has been improved for New World tastes, with goid beef instead of lamb or veal, and a sauce that's more palatable to our tastes. I'd say it's the Americanized version except it's Canadian. Very good, just like Mexican

Corn tortilla vs bread
Onions cilantro and even fruits vs lettuce and tomatoes
Pork, tongue, liver, etc vs chicken breasts and calf
Lime and chili vs cream salad dress and ketchup
Grilled nopal and onions vs French fries

Shitty sizzlers have the same.origin than German wursts yet there is no doubt the second is better.

I find the kebab to lack texture and they too often result in a slimey paste of bland taste, like bad hamburgers.
Tacos have a smaller size which allow better prehension, more variety of textures and most of all, more variety of tastes and flavours. They teds to have mlre variety and combine more fruity citrics tastes like pineapple and limon, which kebab lacks.
