What's defined as American cuisine depends on the region. New England is known for calm chowder, the south is known for its BBQ and seafood dishes like gumbo, ect. plus fatty good tasting food overall. Texas is known for BBQ involving beef such as brisket. The Midwest to my knowledge isn't really defined by anything and the West Coast just takes bits and pieces from all the other regions.

That's more an aspect of our consumer culture and how it affects restaurants. The food is relatively cheap but the overhead(wages, rent, utilities, etc) is high. Americans are obsessed with value and always worried we are being taken advantage of. So the restaurants serve huge portions to make us feel like we got our money's worth. This leads to the whole take-home leftovers thing we do.

Fancy restaurants serve small portions because richies don't care either way and the chefs are all imitating Yurip.

I think it honestly depends, there are lots of Asian, Latino, traditonal European, and even just "American" influences in the food here which makes it fun, I like living in the states because of it.

I've only ever seen Eggs Benedict served on English Muffins. Also, Eggs Benedict isn't even that good. I've yet to order it without immediately regretting not getting a normal American breakfast platter. I'm surprised to learn that it's an American invention though.
