A lot of the interesting stuff takes a long time to prepare so a lot of restaurants don't offer it, since it's technically "fast food", as in, not a sit-in restaurant.
Some of the fancier places will offer it though.
Also restaurants don't care where the money is coming from, it's just whether it's coming in or not.
Third world cuisines are always fun to try, but they get boring really fast. Basically each third world cuisine is the same really simple ingredients rearranged with some kind of spice dumped all over them.
Spanish food and cuisine are considered one of the best, desu.

I know, but fellow immigrants are the easiest market, no? Aren't foreign store's and restaurant's biggest customers usually people also from that country? From my experience, a lot of immigrant businesses are in some corner of a strip mall, have signs in their own language, and the whole community just knows that the store exists. There is a lot of Russian stores in my area, for example, and some Americans aren't even aware that they exist. Then again, Slav food doesn't really appeal to Americans, so maybe it's different with others.

From what I've seen, the biggest customers aren't Afghan people.
For example, the Afghan restaurant I go to has people going there for their lunch breaks, which includes a multitude of ethnicities. It doesn't even have the Farsi language on it's menu or any of the signs.
During dinner time you will see a lot of Afghans but even then you have Pakistanis, Arabs, Indians, etc be there too.
I actually haven't gone to my favourite one in months because of how busy it always is.
