I like it, but it's not my favorite. It's basically a Gouda made from skimmed milk (first they make butter, and then they make cheese with the lower-fat milk that remains). To add flavor they add cumin seeds, which tastes really nice with cheese. No idea if they sell Leidse outside of this country though..

It's bretty good fresh, not quite as good as real Parmigiano-Reggiano but damn close. Goes to shit if you buy it in pre-ground form, of course, but then again more or less all cheese does. Hell, it gave the Italians enough of a run for their money that they had to get their shit together and band up to promote their product over it.

Also, cremoso cheese is nice, epecially with sweet potato paste, but they use it in literally everything here and you get bored of it quickly.

The fact that all mozzarella here is the dry variety is one of the greatest tragedies I've witnessed in this country, right alongside the Peronists being in charge for 70 years.

Well you can always put cheese in your hot mashed potatoes and it'll melt but it's not the same, aligot cheese is specific and makes really long cheese strings, it melts perfectly inside the potatoes
