Yellow lighting, to burgers, subliminally means "this scene is shot in some foreign, poor, shitskin country with a hot, arid climate".
Scenes are colour-coded for the burgers' convenience, making it easier to understand. If a country is depicted in yellow, it means you don't have to worry about locations there getting blown up in the film, since it's a shitty country full of terrorists who hate America.
Admittedly Mexicans do seem to love painting their houses yellow. But also consider that they love painting them with any bright colors whatsoever.

Green tint means it's a gloomy depressing place and something weird is about to go down
To me the yellow tint means like a foreign desert land. Mexico has a lot of desert so it makes sense to tint it yellow.
