Why do people commit to photorealistic pencil drawings?
Isn't art supposed to be a way to express how you see things in the world? With the skill level these people have they can be making way more interesting things.

Because it's actually the only thing they can do with "the skill level these people have".
Copying a photo is a specialised skill, for which you don't need the huge amount of knowledge and experience you need to be able to draw something from your imagination.
So these people get stuck doing this because it's the only remotely impressive thing they can do.
Impressing normies.

Normies will think that drawing is more impressive and skillfull than anything by Milt Kahl. Detail and photorealism = good. To be fair, /ic/ falls for this quit a lot as well.

I 100% agree. I know a girl who does this but she doesn't pay any attention to what she's drawing.
The skill is to copy 2d to 2d as she sees it and mostly the faces are these forward facing portraits.
I know for a fact that the girl doesn't pay attention to ratios and distances of a face. But more just ratios and distances on the photo they are copying. There is no understanding or learning gained other than being able to draw other forward facing face drawings

Naw I think thats just a normie meme.
Its like asking why people play sports or games. Theres an objective "Good" and it doesn't just come from emotion. No one gives you the first place medal for earning fifth but TRYING REALLY HARD.
It takes skill to express that emotion.
