Shimazu. At first I liked them because I liked how the sun cross looked but after I researched them I found myself liking them more and more. Then I learned of the Satsuma rebellion and they were established firmly as my favorite clan. Second favorite is the Torii Clan because Torii Modotada's letter to his son and death at the siege of Fushimi Castle was basically the embodiment of Bushido.

Toyotomi because he's a fucking badass. Oda was pretty good as well, but that's too easy.
Date Clan, look up the Date Maru and his correspondance with the pope. Pretty based.
Also Takeda and Shimazu.
