It's still such a vague, meaningless standard that it has virtually no answer. What constitutes a "dragon" has varied enormously across time, cultures, and fantasy systems. Like take this anon.

If you want the dragons from say, most standard DnD cosmologies, who are supernally intelligent, can turn invisible, take people over, in addition to the whole breathing fire and being huge, probably not.

Fighting a mammoth head to head is the closest thing in real life to fighting a dragon due to their raw power alone.
They could do that, with sticks and stones, so its fair to assume a dragon would be doable.

How intelligent are they? How thick is their skin? When must they eat? What is their behavioral pattern?

How much protection does its scales offer?

What does it eat and how many calories does it need to sustain its weight.

How often can it use its fire and how effective is it as a weapon?

How intelligent is it?

For how long periods at a time can it fly?

How hostile is it towards humans? Does it view us as prey, potential threats or ignores us completely?

Does it have any natural weakness that are easily exploitable? For instance it can only nest in certain types of terrain or it is extremely clumsy on land.

How territorial are they?

These are just some of many important questions that need answers before any decent response can be given.

But the most important thing that allowed that to happen was knowledge of a hole in Smaug's "armor". Much of the buildup to his character was the fact many people died trying to kill him.

Also, Smaug isn't the full picture of LoTR dragons. There were several different types, some who didn't even breath fire. The Dwarves in the high North actually killed a few of them, so there were essentially a powerful, but mortal and vulnerable large monster such as a troll.

Because you see, the dragon would naturally eat anything with fat, fat is salty and delicious. But by mixing it with pitch and hair, which would clump up into undigestable lumps and as the dragon kept eating the cakes, it eventually would rupture it's own bowels.

And before some idiot decides to claim dragons don't exist, try to remember that the word "dinosaur" wasn't invented until the 1840's, and prior to that, any sufficiently large reptile would naturally be called a dragon. That was the word for a terrible lizard prior to 1840 or whenever.
