How did the battles between two groups of pikemen looked like? Were there some people trying to flank them while the pikemen were poking each other or was it just a huge pokefest?

One of the pike formations would advance. There were different kinds of pike formations but usually the musketeers were on the wings of each brigade while the pikes made up a block in the center. The musketeers might either fire at each other the whole time or save their fire for one devastating volley at 10-20 yards. Then the musketeers would either draw swords or use their muskets as clubs and close into close combat with the enemy. The two sides would stab and beat each other until one side ran away.
There wasn't much flanking because the flanks were the domain of cavalry. The only way infantry could be flanked by other infantry would be if part of the line collapsed, they were ambushed or outnumbered.
