We know that Turgon packs 10,000 warriors Nirneath Arnoediad. And he's got 1/3 of the Noldor that followed Fingolfin (Most, but no hard number division), and a unnamed but larger number of Sindar when he goes off to found Gondolin.
If you assume that every adult male elf fights, and that Gondolin's military is more or less in line with its overall population (which certainly seems to be the case from the Silm and CoH) you're probably talking a total Noldor population in Arda of about 60-70,000.

Horse archers do tend to crush everything, but being an effective horse archer is fucking hard. Mongols could do it because they spent their entire lives riding and shooting. A bunch of peasant farmers cannot be trained to be horse archers.
I don't know what a "stealth archer" is, but the archers in general tend to be vulnerable. You can't "snipe" effectively with a bow, really. Archers were used in large groups, to fire volleys in the general direction of enemies. They were like artillery. They could weaken a hardened enemy force as it advanced, but not destroy it before they arrived, at which point they would be rekt.
So why not just have MOSTLY archers, protected by some melee troops, you ask? Well, the Persians did exactly that, and they conquered most of the known world with it. But it proved to be very ineffective against Greek heavy infantry, since their tight wall of shields and armor protected them long enough to advance and steamroll over them.
