morocco was basically a descendent/brother of the granada kingdom from spain. it had it's own monarchy unrelated to the arab empire.
when the ottomans came, the king just made a peace pact with the ottomans and played it smoothly in order to retain his independence. they knew he wasn't an enemy and he knew how to play it wisely with them by not posing as a threat and allowing them to come into the country if they wanted to. so the ottomans never really saw a reason to conquer it.

They were allied for a long time. A big reason is that Ottoman Morocco would continually be harassed by Spaniards who would support rivals in Morocco in order to chase the Ottomans away. Just a view of mine.

Safavid dynasty; a family of Persian/Kurds/Azeris were highly militarized, formed a coalition to prevent the Ottoman Turks from expanding into their lands and then created their own empire that rivaled and matched the Ottomans for nearly the next 3 centuries more or less.

They tried constantly but the Zagros are a hell of a natural border and the Safavids were very determined to stop them. They even tried to ally with the Habsburgs a couple of times. The persians attacked pretty much every time they knew that the turkish sultan would be campaigning in Europe.

Iran basically was for the Ottomans what France was for the Habsburgs. A constant pain in the ass preventing the massive empire from the other big empire.

Mamluk Egypt also had some nonimal rule over the guys in Syria and Levant.

In Anatolia you had some rogue Byzantine generals with their autistic feudal lands such as the """"""""Empire"""""""" of Trebizond, and littler Turkic warlords who were absorbed by the Osmanli dynasty.

Most Mamluks are Turkics. And some Turkics do display whiteish features since much of Central Asia used to be populated by Indo-Iranian Steppenigs, whom the various Turkics groups either absorbed or conquered on their way Westwards.

But some Mamluks weren't Turkics as they could be Georgian or even Slavic.

Except their traits still crop up among the Turkics. And this is before Russian rule or Settlement in Anatolia.

Steppe Nomads like Turkics often formed "states" centered around a great clan bitching lesser clans. Some of the Iranics in Asia who got conquered became part of this and simply disappeared through enculturation and interbreeding.
