The middle east was pretty darn white before the arab conquests. Then came the Arabs, for sure they did not change the makeup of the population much, but they added to a pre-existing semitic component. Then came assorted Turkic and Mongol tribes, and then the Arabs and the Turks had the brilliant idea to import milions of black slaves from Africa, further fucking things up genetically.

The actual answer is that endogamy significantly raises the probability of thus-far recessive traits becoming dominant within a group. Since pale features were already considered exotic and beautiful, any group that included at least one person with fair hair was likely to become more fair, on average, over time due to sexual selection. The family with the fairest female children would have received the most offers from the wealthy to arrange marriages with the wealthy's sons, making it almost inevitable that even if the ruling class were not pale to begin with, they would become pale over time as the phenotype spread throughout the group.
This would be reinforced by the gradual shift in skin tone between the endogamous gorup and the majority population. The more unique the endogamous group becomes from the rest of the population, the less they feel inclined to intermarry with them, and so in addition to being reclusive to begin with they begin to define "ugliness" within their own tribe as any features that resemble outsiders; in other words, darker complexions.
If you look at any genetic studies on groups like these they share roughly the same genetic haplotypes as the Arab majorities. Even though they seem "whiter," they come from the same founding group.

The full picture is that Levantines were a distinct people thousands of years ago from Semites, Iranians, and Greeks. Any similarity shared with Western Europeans only comes from Levantine migrations into Europe, not the other way around - that is Levantines are not 'white' but rather share a common ancestor with many 'white' groups.
The only thing the Arab Conquests did was break down the ethnic boundaries between the major groups through religion, but even then this was so recent that Muslim Levantines are barely any different from non-Muslim Levantines.
