Whatever happened to phone design? Shit used to be an art form in and of itself.
is it just impossible to make touchscreen phones vary drastically in appearance when they all have to have a big flat screen on one side?

The Edge phones and the blackberry priv are the only phones I can think of that have deviated from "big flat rectangle", and even then it they were hardly a deviation at all. There's not really anywhere left to go from there, except maybe transparent screens, which is still not really much of a change

People want screens for viewing content. Touch screens are good enough for most people, and swipe is pretty fast for text messages.

Phones tended towards the ideal shape, one that is without room for flashy design due to need for compactness and large displays.
If you want to make your phone look different, cases serve that purpose just fine

Holy hell that is nice.
Unfortunately games and video and web browsing now dominate the use of a phone, so flat touchscreens with minimal distraction in the design is going to be the way to go until something upsets the way "content" is consumed. Which may be a long time.
I'd love something like the phones from Macross F/Delta
