Personally, whether it had touchwiz or not I would always install a custom ROM such as Cyanogenmod because I do not like to have GApps on my phone in any form. Running my S5 without google helps my battery last very long and I can get by with FDroid.
I understand your point about the warranty, but personally I would violate the terms anyway to remove bloat and google...so I just buy insurance for the phone instead of counting on the warranty. I'm 33 and I have yet to need to use the warranty, but insurance I needed twice. I know everyone is different though, that's just been my experience.
I have been using this S5 since launch and I enjoy it. I will get the new note if it has a microSD and removable battery. I heard good things about the nexus though. Have you had it since it came out?

I've got one still, werks great and get 5 and a half to 6 hours of on-screen time with the original battery, running a port of the S5's Marshmellow.
The 3gb of RAM really futureproofed it and the snapdragon 800 isn't too bad even today.
