They are kind of cool i guess, but they only slightly optimize very specific problem solving which humans can very well do. eg finding the perfect cone shape for optimal air flow and all of that.

Been running this for a while, it evolves creatures that can walk for the longest distance.
The best creature can now walk on two legs, but many nodes are still unused.

No, you model a thing as a string then splice them together to make kids and define a fitness function, then kill off the weak kids or leave some anyway and repeat
